FARMER’S SALAD
Salad:
1 bunch broccoli, cut into bite size florets
½ cup grated fresh carrots
1 ½ cup frozen peas, thawed
¾ cup dried currants, raisins, or dried cranberries
½ cup raw, unsalted sunflower seeds
5 strips GF, organic bacon, cooked crisp
Dressing:
½ cup GF, organic sour cream
½ cup GF organic, plain yogurt
2 tablespoons evaporated cane juice/organic sugar
2 tablespoons honey
1 teaspoon sea salt
¼ teaspoon pepper
1) Toss the salad ingredients together in a large bowl
2) Mix all the dressing ingredients together and mix with salad
Makes 6- 8 side servings or 4 main dish servings. Serve with cheddar biscuits.
